Whole30 Day 2

Lunch:
Sauteed chicken, onion, bell peppers, green chilis and cabbage.
It was delicious!
I made these for breakfast to eat before my 10K run.
They are filled with ham (not lunch meat), onion, and kale.
I baked them for 15 minutes at 350

The finished product. Surprisingly they are pretty good.
I am usually not one to reheat eggs for breakfast but they helped!

Dinner:
Slow roasted a Cornish game hen and then turned it into soup.
Threw in carrots, cabbage, onion, and celery. 

I didn't run yesterday because my legs were still super sore from HIIT but I did stretch out in the living room to get ready for the race. I think this time around completing our Whole30 is going to be easier than the last!

New Kicks!


Since my FleetFeet gift card was burning a hole in my wallet I went got some new shoes! Going to try out the New Balances since they didn't have my size in my Asics that I have been wearing since May. I also picked up a pair of calf sleeves hoping that might help with the shin splints I have been getting. That could also be from my shoes being almost 7 months old too. 



Tomorrow is my first 10K of the year and 1 of 6 I have set to run for myself as a goal. I am relaying the American Bank Half Marathon with my friend Becky. Fingers crossed the weather isn't too crappy and the soreness in my legs from HIIT class on Tuesday will subside so I can get in a good run. The course is simple, out and back on Shoreline Drive next to the bay so as long as the weather holds up it should be a great run!

Whole30 Day 1'ish

This was breakfast day 1. Tried to use my Sea Snax as a wrap but it fell apart.

Celery, Justin's Almond Butter, and cranberries for an after dinner snack

Went to bed early so got up super early and started meal prepping and making breakfast for day 2.

Found a great replacement for coffee since I usually drink mine with almond milk and honey.
This stuff is fantastic!

The end result for myself and my husband.
Eggs inside bell peppers, crispy potato hash, cherry tomatoes, bacon, and fruit!

Favorite In A Pinch Snacks

So my second official round of Whole30 starts today! And to help me out I ordered some snack bars that came in handy last year when I did it. So far, my fave has to be the Yawp bars. Last year I got the variety pack but this time around I stuck to the Coconut Chai Seed ones. 


My new addition this time around is to try the RxBar Coconut Cacao bars
I am hoping they can help curb my sweet cravings if need be. 

I am actually pretty stoked about doing it this time around because a friend from here in Alice started her Whole30 6 days ago. Dave is going to do it with me as well but it is fun to have a friend to chat with about the struggles and to have an accountability partner as well. Becky is my running buddy for the race this Saturday (Team Two of a Kind) so I am looking forward to catching up with her about her progress.
